  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup beetroot puree
  • 1/2 cup milk
  • 2 eggs, separated
  • 2 tbsp melted butter
  • 200g smoked salmon
  • 1/4 cup sour cream
  • Fresh dill for garnish


  1. In a bowl, whisk together the flour, baking powder, salt, and black pepper.

  2. In another bowl, whisk together the beetroot puree, milk, egg yolks, and melted butter.

  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  4. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.

  5. Heat a non-stick pan over medium heat and lightly grease with butter or oil.

  6. Spoon about 2 tablespoons of batter onto the pan for each blini and cook until bubbles form on the surface. Flip and cook for another minute until golden brown.

  7. Remove from the pan and let cool slightly.

  8. Top each blini with a slice of smoked salmon and a dollop of sour cream.

  9. Garnish with fresh dill.

  10. Serve immediately and enjoy!
