  • 4 salmon fillets
  • 2 medium beetroots, cooked and diced
  • 1 cup crumbled feta cheese
  • Juice of 1 lime
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Season the salmon fillets with salt and pepper, then place them on the baking sheet.

  3. Bake the salmon for 12-15 minutes, or until cooked through and flaky.

  4. In a bowl, combine the diced beetroots, crumbled feta cheese, lime juice, and chopped parsley. Season with salt and pepper to taste.

  5. Serve the cooked salmon fillets topped with the beetroot, feta, and lime salsa.
