Ingredients

  • 1 lb catfish fillet, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 can diced tomatoes (14 oz)
  • 4 cups chicken broth
  • 1 cup water
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bell pepper, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped

Instructions

  1. In a large pot, sauté onion and garlic in olive oil until softened.

  2. Add catfish, diced tomatoes, chicken broth, water, thyme, paprika, salt, and black pepper. Bring to a boil.

  3. Reduce heat and let simmer for 15 minutes.

  4. Add bell pepper, carrots, and celery. Simmer for another 15 minutes or until vegetables are tender.

  5. Serve hot.
