Ingredients

  • 2 sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 1 lb catfish fillets, cut into chunks
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add sweet potatoes and cook for 8-10 minutes, stirring occasionally.

  3. Add red bell pepper and onion, and cook for additional 5 minutes.

  4. Season catfish with smoked paprika, garlic powder, salt, and pepper. Add catfish to skillet and cook for 5-7 minutes until cooked through.

  5. Serve hot.
