How To Make Elderflower, Lemon & Vanilla Cordial

Ingredients

  • 10 elderflower heads
  • 2 lemons
  • 1 vanilla pod
  • 300g sugar
  • 600ml water

Instructions

  1. Remove the elderflower heads from their stems and place them in a large bowl.

  2. Slice the lemons and add them to the bowl.

  3. Split the vanilla pod lengthwise and scrape out the seeds. Add the seeds and the pod to the bowl.

  4. In a saucepan, combine the sugar and water. Heat until the sugar has dissolved, stirring occasionally.

  5. Pour the hot syrup over the elderflowers, lemons, and vanilla in the bowl. Stir well to combine.

  6. Cover the bowl with a clean cloth and leave to infuse for 24 hours.

  7. Strain the cordial through a fine mesh sieve into sterilized bottles, discarding the solids.

  8. Seal the bottles and store in the refrigerator for up to 2 weeks.

  9. To serve, dilute the cordial with water or sparkling water to taste. Serve over ice and garnish with a slice of lemon.
