Ingredients
- 2 cups mixed wild mushrooms, sliced
- 1 shallot, minced
- 2 cloves of garlic, minced
- 2 tablespoons butter
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

In a large skillet, melt the butter over medium heat. Add the shallot and garlic and cook until softened.

Add the mushrooms and thyme to the skillet and cook until the mushrooms have released their moisture and are tender. Season with salt and pepper.

Roll out the puff pastry and cut it into 4 equal squares. Place the squares on a baking sheet lined with parchment paper.

Spoon the mushroom mixture onto each pastry square, leaving a small border. Fold the edges of the pastry over the filling.

Brush the pastry with the beaten egg wash.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
