Ingredients

  • 1 sheet of ready-made shortcrust pastry
  • 100g blackcurrant jam
  • 100g butter, softened
  • 100g caster sugar
  • 2 eggs
  • 1 tsp almond extract
  • 100g ground almonds
  • 25g plain flour
  • 25g flaked almonds

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a tart tin.

  2. Roll out the pastry and line the tart tin with it, trimming off any excess.

  3. Spread the blackcurrant jam evenly over the pastry base.

  4. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  5. Beat in the eggs one at a time, followed by the almond extract.

  6. Fold in the ground almonds and flour until well combined.

  7. Pour the almond mixture over the blackcurrant jam and smooth the top with a spatula.

  8. Sprinkle the flaked almonds over the top.

  9. Bake for 40 minutes or until the tart is golden brown and firm to the touch.

  10. Allow the tart to cool slightly before serving. Enjoy!
