These soft oatmeal cookies are a delicious treat for any time of the day.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned oats

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.

  3. In a large bowl, beat butter and sugars together until creamy.

  4. Add in egg and vanilla extract, and mix until well combined.

  5. Add the flour mixture into the wet mixture and stir until combined.

  6. Fold in oats.

  7. Scoop dough using a cookie scoop or spoon onto the prepared baking sheets.

  8. Bake for 12-14 minutes, or until the edges are golden brown.

  9. Allow cookies to cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely.
