How To Make Rum & Raisin Puddings

Ingredients
- 1 cup raisins
- 1/4 cup rum
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- Whipped cream or vanilla ice cream, for serving
Instructions

In a small bowl, soak the raisins in rum for at least 15 minutes to plump them up.

Preheat your oven to 350°F (175°C) and grease four individual ramekins or pudding molds.

In a large bowl, combine the flour, brown sugar, baking powder, and salt.

In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Fold in the soaked raisins and any remaining rum.

Divide the batter evenly among the prepared ramekins or pudding molds.

Place the ramekins on a baking sheet and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
