How To Make Baked Rice Pudding

Ingredients
- 1 cup cooked rice
- 2 cups milk
- 1/4 cup sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/4 cup raisins (optional)
Instructions

Preheat the oven to 350°F (175°C). Grease a baking dish.

In a saucepan, heat the milk over medium heat until hot but not boiling. Stir in the cooked rice and sugar.

In a separate bowl, beat the eggs. Gradually add a small amount of the hot rice mixture to the beaten eggs, whisking constantly to temper the eggs and prevent scrambling.

Stir the tempered eggs into the saucepan with the remaining rice mixture. Cook over medium heat for 2 minutes, stirring constantly, until slightly thickened.

Remove from heat and stir in the vanilla extract, ground cinnamon, ground nutmeg, and raisins (if using).

Pour the rice mixture into the greased baking dish. Place the dish in a larger baking pan filled with hot water to create a water bath.

Bake for 45-50 minutes, or until the top is golden and the pudding is set around the edges but slightly jiggly in the center.

Remove from the oven and let cool slightly before serving. Serve warm or chilled, sprinkled with an extra sprinkle of ground cinnamon if desired.
