  • 1 ready-made pie crust
  • 1 cup mixed dried fruit (such as raisins, cranberries, and cherries)
  • 1/4 cup chopped almonds
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp cornstarch
  • 1 tbsp water
  • Whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Roll out the pie crust and cut into 4 equal-sized circles to fit individual pie dishes.

  3. Press the crust into the dishes and trim any excess.

  4. In a bowl, mix together the dried fruit, chopped almonds, sugar, cinnamon, and nutmeg.

  5. Divide the fruit mixture evenly among the pie dishes.

  6. In a small bowl, mix together the cornstarch and water to make a slurry.

  7. Pour the slurry evenly over the fruit mixture in each dish.

  8. Place the pies on a baking sheet and bake for 25 minutes, or until the crust is golden and the filling is bubbly.

  9. Remove from the oven and let cool for a few minutes before serving.
