Serves:
Ingredients
- 1 1/2 cups of all-purpose flour
- 1/2 cup of cold unsalted butter, cubed
- 1/4 cup of granulated sugar
- 1/4 teaspoon of salt
- 1/4 cup of cold water
- 1 cup of mincemeat
- 1 tablespoon of milk
- Powdered sugar for dusting
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a large mixing bowl, combine the flour, butter, sugar, and salt. Use your fingers or a pastry cutter to rub the butter into the flour until it resembles breadcrumbs.
-
Gradually add the water and mix until the dough comes together. Form it into a ball, then wrap it in plastic wrap and refrigerate for 30 minutes.
-
Roll out the dough on a lightly floured surface to about 1/8 inch thick. Use a round cutter to cut out circles that will fit into your muffin tin.
-
Press each circle of dough into the muffin tin, making sure to leave some overhang. Fill each pie with about 2 tablespoons of mincemeat.
-
Use the remaining dough to cut out smaller circles or shapes to use as the pie lids. Place them on top of the mincemeat and press the edges to seal.
-
Brush the tops of the pies with milk and use a sharp knife to make a small slit in each lid for steam to escape.
-
Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown.
-
Allow the mince pies to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
-
Dust with powdered sugar before serving.
