  • 1 lb cooked chicken, diced
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet of puff pastry, thawed

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  3. Gradually whisk in the chicken broth and milk. Cook, stirring constantly, until the sauce thickens.

  4. Add the cooked chicken and frozen mixed vegetables to the skillet. Season with salt and black pepper. Stir well to combine.

  5. Pour the chicken mixture into a deep dish pie plate.

  6. Place the puff pastry sheet over the pie plate, trimming any excess. Cut a few slits in the pastry to allow steam to escape.

  7. Bake for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.

  8. Allow the chicken pot pie to cool for a few minutes before serving.
