- 1 cup frozen mixed vegetables
- 1 cup chicken broth
- 1 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 sheet of puff pastry, thawed
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a large skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
-
Gradually whisk in the chicken broth and milk. Cook, stirring constantly, until the sauce thickens.
-
Add the cooked chicken and frozen mixed vegetables to the skillet. Season with salt and black pepper. Stir well to combine.
-
Pour the chicken mixture into a deep dish pie plate.
-
Place the puff pastry sheet over the pie plate, trimming any excess. Cut a few slits in the pastry to allow steam to escape.

Bake for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
-
Allow the chicken pot pie to cool for a few minutes before serving.
