How To Make Sweet Potato Chicken Pie
Skip the traditional pastry crusted pie and throw in a healthier alternative by replacing it with a seasoned sweet potato crust that goes well with the filling.
Ingredients
- 36 oz sweet potaotes, soft, cooked
- ½ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp salt, optional
- 2 tbsp butter, melted
- 1 tbsp sherry, optional
Filling
- 2 tbsp butter
- 1 medium onion, sliced or minced
- 6 oz mushrooms, or 2 cans, drained, sliced
- ½ cup olives, optional, quartered large stuffed
- 1 can Cream of Mushroom , or Celery soup, undiluted
- dash pepper
- 2 cup chicken, cubed
Instructions

Mash soft sweet potatoes while adding spices with melted butter and sherry.

Line a 9 inch pie plate and pour in the mixture. Building up the edges.
Filling
- Sauté minced onion in skillet with butter until tender.
- Add mushrooms with their liquid and the remaining ingredients, stirring occasionally.

Pour mixture into sweet potato pie crust.

Bake 30 minutes in 350 degrees F oven.
