How To Make Ultimate Scones

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup dried cranberries (optional)
- 1/4 cup heavy cream, for brushing
- 1 tbsp coarse sugar, for sprinkling
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add the cold butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate small bowl, whisk together the buttermilk and vanilla extract. Pour the buttermilk mixture into the dry ingredients and mix until just combined. Do not overmix.

If using dried cranberries, gently fold them into the dough.

Turn the dough out onto a lightly floured surface. Gently knead the dough a few times until it comes together, then pat it into a 1-inch thick rectangle.

Use a sharp knife or biscuit cutter to cut the rectangle into 8 equal squares or circles.

Place the scones on the prepared baking sheet. Brush the tops with heavy cream and sprinkle with coarse sugar.

Bake for 18-20 minutes, or until the scones are golden brown. Remove from the oven and let cool on a wire rack.

Serve warm with butter, jam, or clotted cream.
