  • 4 cups of fresh rhubarb, chopped
  • 1 cup of granulated sugar
  • 1/4 cup of all-purpose flour
  • 1/2 teaspoon of cinnamon
  • 1 cup of old-fashioned oats
  • 1/2 cup of packed brown sugar
  • 1/2 cup of all-purpose flour
  • 1/2 cup of unsalted butter, cold and diced

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.

  2. In a large bowl, combine the rhubarb, granulated sugar, 1/4 cup of flour, and cinnamon. Mix well and spread evenly into the prepared baking dish.

  3. In a separate bowl, combine the oats, brown sugar, 1/2 cup of flour, and diced butter. Use a pastry cutter or your fingers to mix until crumbly.

  4. Sprinkle the oat mixture over the rhubarb in the baking dish.

  5. Bake in the preheated oven for 40 minutes, or until the topping is golden brown and the rhubarb is tender.

  6. Remove from the oven and let cool for a few minutes before serving.

  7. Serve warm with vanilla ice cream or whipped cream, if desired.
