Serves:

Ingredients

  • 1 cup of cranberries
  • 1/2 cup of sugar
  • 1/4 cup of orange juice
  • 1/4 cup of water
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of cloves
  • 1/4 teaspoon of vanilla extract
  • 1 package of ready-made pie crust

Instructions

  1. In a saucepan, combine the cranberries, sugar, orange juice, water, cinnamon, nutmeg, cloves, and vanilla extract. Cook over medium heat until the cranberries burst and the mixture thickens. Remove from heat and let it cool.

  2. Preheat the oven to 375°F (190°C).

  3. Roll out the pie crust and use a round cutter to cut out circles to fit into a muffin tin. Press the circles into the muffin tin.

  4. Spoon the cranberry mincemeat into each pie crust.

  5. Use the remaining pie crust to create a lattice pattern on top of each pie.

  6. Bake in the preheated oven for 25 minutes or until the crust is golden brown.

  7. Remove from the oven and let it cool before serving.
