How To Make Plum Almond Pastry
A delicious pastry filled with juicy plums and a sweet almond filling.
Serves:
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 1 cup cold unsalted butter, cut into small cubes
- 1/4 cup ice water
- 4 plums, pitted and sliced
- 1/4 cup almond meal
- 2 tbsp honey
- 1 egg, beaten (for egg wash)
- 2 tbsp sliced almonds
Instructions

In a large bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Slowly add the ice water, mixing with a fork until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Transfer the dough to the pan, pressing it into the edges.

In a small bowl, mix together the almond meal and honey. Spread the almond mixture evenly over the dough.

Arrange the plum slices on top of the almond mixture.

Brush the beaten egg over the edges of the pastry. Sprinkle the sliced almonds over the top of the plums.

Bake for 35 minutes or until the pastry is golden brown and the plums are tender.

Allow to cool slightly before serving. Serve warm or at room temperature.
