Serves:
Ingredients
- 2 cups of fresh blueberries
- 2 cups of rhubarb, chopped
- 1 cup of sugar
- 1/4 cup of all-purpose flour
- 1 teaspoon of lemon zest
- 1 tablespoon of lemon juice
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1 package of ready-made pie crusts
- 1 tablespoon of unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a large bowl, combine the blueberries, rhubarb, sugar, flour, lemon zest, lemon juice, cinnamon, and nutmeg. Mix well.
-
Roll out one pie crust and place it in a 9-inch pie dish. Trim any excess dough hanging over the edges.
-
Pour the filling into the pie crust, spreading it evenly.
-
Dot the filling with pieces of butter.
-
Roll out the second pie crust and place it on top of the filling. Trim the excess dough and crimp the edges to seal the pie.
-
Brush the top crust with the beaten egg to give it a golden finish.
-
Cut a few slits on the top crust to allow steam to escape.
-
Place the pie on a baking sheet and bake for 50-55 minutes, or until the crust is golden brown and the filling is bubbly.
-
Remove the pie from the oven and let it cool for at least 1 hour before serving. This will allow the filling to set.
