How To Make Pink Grapefruit, Raspberry & Mint Jellies

Ingredients

  • 2 pink grapefruits, juiced
  • 1 cup frozen raspberries
  • 1/4 cup fresh mint leaves
  • 1/2 cup sugar
  • 4 gelatin sheets
  • 1 cup boiling water

Instructions

  1. In a blender, combine the pink grapefruit juice, frozen raspberries, fresh mint leaves, and sugar. Blend until smooth.

  2. In a separate bowl, soak the gelatin sheets in cold water for 5 minutes.

  3. Once the gelatin sheets are softened, squeeze out any excess water and add them to the boiling water. Stir until completely dissolved.

  4. Add the dissolved gelatin mixture to the blender and blend again until well combined.

  5. Strain the mixture through a fine sieve to remove any pulp or seeds. Pour the strained mixture into individual serving dishes or molds.

  6. Chill in the refrigerator for at least 6 hours, or until fully set.

  7. Serve the pink grapefruit, raspberry & mint jellies chilled, garnished with fresh mint leaves.
