How To Make Pepper Jelly

Ingredients

  • 4 red bell peppers, seeded and chopped
  • 2 jalapeno peppers, seeded and chopped
  • 1 cup apple cider vinegar
  • 6 cups granulated sugar
  • 1 package liquid pectin

Instructions

  1. In a large saucepan, combine the red bell peppers, jalapeno peppers, and vinegar. Bring to a boil over medium heat.

  2. Reduce heat and simmer for 10 minutes, until peppers are softened.

  3. Transfer the pepper mixture to a blender and blend until smooth.

  4. Return the mixture to the saucepan and stir in the sugar. Bring to a rolling boil over high heat, stirring constantly.

  5. Stir in the liquid pectin and continue to boil for one minute, stirring constantly.

  6. Remove from heat and skim off any foam that forms on the surface.

  7. Pour the jelly into sterilized jars and seal. Allow to cool to room temperature before refrigerating.

  8. The jelly will thicken as it cools. Serve with cheese or spread on toast.
