Ingredients

  • 4 lemons
  • 2 cups of water
  • 1 cup of granulated sugar

Instructions

  1. Wash the lemons, then slice off the ends and cut into quarters.

  2. Remove the flesh and pith from the lemon peels, leaving only the yellow part.

  3. Slice the lemon peels into thin strips.

  4. In a medium saucepan, bring the water to a boil.

  5. Add the lemon peels and blanch for 5 minutes.

  6. Drain the lemon peels and set aside.

  7. In the same saucepan, combine the sugar and 1 cup of water.

  8. Bring the mixture to a boil, stirring until the sugar dissolves.

  9. Add the blanched lemon peels to the saucepan and simmer for 45 minutes, or until the peels become translucent and tender.

  10. Remove the lemon peels from the syrup and place on a wire rack to cool and dry.

  11. Once the peels are dry, roll them in granulated sugar to coat evenly.

  12. Store in an airtight container.
