How To Make Instant Pot Pineapple Upside-Down Cake Recipe
A moist and delicious cake with juicy pineapple topping made in the Instant Pot.

Ingredients
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1 can pineapple slices (20 oz)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup granulated sugar
- 1/3 cup buttermilk
- 1 egg
- 1 tsp vanilla extract
Instructions

In a heat-resistant bowl, mix brown sugar and butter. Place bowl in Instant Pot and pour 1 cup of water in the pot.

Add pineapple slices on top of the sugar-butter mixture.

In a separate bowl, combine flour, baking powder, baking soda, and salt. Set aside.

In another bowl, cream granulated sugar and buttermilk. Add egg and vanilla extract. Mix well.

Gradually add dry ingredients to the wet ingredients and mix until well combined.

Pour batter over pineapple slices in the Instant Pot and spread it evenly.

Close the lid and set the Instant Pot to manual pressure cooking for 35 minutes.

When done, quick release the pressure and carefully remove the cake from the Instant Pot.

Let the cake cool for 5-10 minutes before flipping it onto a serving platter.
