How To Make Posh Ice Cream Sandwiches

Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 pint of your favorite ice cream (choose a flavor that pairs well with chocolate cookies)
- sprinkles or chocolate chips, for decorating (optional)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract to the butter mixture until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Use the back of a spoon or your fingertips to slightly flatten each dough ball.

Bake for 8-10 minutes, or until the cookies are set around the edges.

Allow the cookies to cool completely on the baking sheet.

Once the cookies are cooled, scoop a generous amount of ice cream onto the bottom side of one cookie.

Place another cookie on top to create a sandwich, gently pressing down to secure.

Optional: Roll the sides of the sandwich in sprinkles or chocolate chips for decoration.

Repeat with the remaining cookies and ice cream.

Serve immediately or wrap each sandwich in plastic wrap and place in the freezer until ready to serve.
