  • 1 cup grated coconut
  • 1 can (14 oz) coconut milk
  • 1/2 cup sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a blender, combine grated coconut and coconut milk. Blend until smooth.

  2. Pour the mixture into a fine mesh sieve to remove any clumps or solids. Press down with a spoon to extract as much liquid as possible.

  3. In a mixing bowl, whisk together the coconut mixture, sugar, heavy cream, and vanilla extract until well combined.

  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually around 25-30 minutes.

  5. Transfer the churned ice cream into a lidded container and freeze for at least 4 hours, or until firm.

  6. Serve the grainy coconut ice cream in bowls or cones and enjoy!
