Ingredients

  • 1 can (14 oz) of coconut milk
  • 1 cup of heavy cream
  • 1/2 cup of sugar
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of shredded coconut (optional)

Instructions

  1. In a mixing bowl, whisk together the coconut milk, heavy cream, sugar, and vanilla extract until well combined.

  2. If desired, toast the shredded coconut in a dry skillet over medium heat until golden brown, then let it cool.

  3. Pour the coconut milk mixture into an ice cream maker and churn according to the manufacturer’s instructions.

  4. If using shredded coconut, add it to the ice cream during the last few minutes of churning.

  5. Once the ice cream has reached a soft-serve consistency, transfer it to a lidded container and freeze for at least 6 hours to firm up.

  6. Serve the coconut ice cream in bowls or cones and enjoy!
