Ingredients

  • 1 cup pineapple chunks, fresh or canned
  • 2 tbsp rum
  • 4 scoops coconut ice cream
  • 1/4 cup shredded coconut
  • 1/4 cup chopped macadamia nuts
  • 4 maraschino cherries, for garnish

Instructions

  1. In a small bowl, mix together the pineapple chunks and rum. Let it marinate for 5 minutes.

  2. Divide the pineapple chunks into 4 serving glasses or bowls.

  3. Place a scoop of coconut ice cream on top of each glass.

  4. In a dry skillet, toast the shredded coconut and chopped macadamia nuts over medium heat until golden brown. Remove from heat and let it cool.

  5. Sprinkle the toasted coconut and macadamia nuts over the ice cream.

  6. Garnish with a maraschino cherry.

  7. Serve immediately and enjoy!
