How To Make Mandarin Orange Delight

A fantastic marmalade in just a little over 30 minutes! This Mandarin Orange Delight would be definitely be the star of your breakfast of brunch, be it spread onto buttered toast or croissants. A sweet and tart blend of Manadrin orange, along with pineapple for that wonderful blend of refreshing citrus.

  • 4 cups mandarin oranges, drained (reserve juice)
  • 1 can pineapple with juice, (20 oz) crushed
  • 1 can orange juice concentrate, (12 oz) thawed, frozen
  • ¾ cup lemon juice
  • 1 tsp dried orange peel
  • 1 tsp ground ginger
  • 1 tsp ground cardamom
  • 4 cups granulated sugar , or Splenda
  • 1 pack Lime Jell-O, (3 oz) regular or sugar-free
  • 1 cup Clear-Jel A
  • 1 cup mandarin orange juice


  1. Drain mandarin oranges, reserve 1 cup juice.

  2. Put in a large stockpot together with remaining ingredients.
  3. Bring to a boil, turn down heat, and simmer for about 30 minutes.
  4. In a bow, whisk Clear-Jel into 1 cup mandarin orange juice.

  5. Stir into stockpot and bring back to a boil. Simmer for 5 to 8 minutes until thick.

  6. Ladle into sterilized jars.
  7. Wipe rims.
  8. Cap and seal.
  9. Process in a boiling water bath for 10 minutes.
