A fantastic marmalade in just a little over 30 minutes! This Mandarin Orange Delight would be definitely be the star of your breakfast of brunch, be it spread onto buttered toast or croissants. A sweet and tart blend of Manadrin orange, along with pineapple for that wonderful blend of refreshing citrus.

Ingredients
- 4 cups mandarin oranges, drained (reserve juice)
- 1 can pineapple with juice, (20 oz) crushed
- 1 can orange juice concentrate, (12 oz) thawed, frozen
- ¾ cup lemon juice
- 1 tsp dried orange peel
- 1 tsp ground ginger
- 1 tsp ground cardamom
- 4 cups granulated sugar , or Splenda
- 1 pack Lime Jell-O, (3 oz) regular or sugar-free
- 1 cup Clear-Jel A
- 1 cup mandarin orange juice
Instructions

Drain mandarin oranges, reserve 1 cup juice.
- Put in a large stockpot together with remaining ingredients.
- Bring to a boil, turn down heat, and simmer for about 30 minutes.

In a bow, whisk Clear-Jel into 1 cup mandarin orange juice.

Stir into stockpot and bring back to a boil. Simmer for 5 to 8 minutes until thick.
- Ladle into sterilized jars.
- Wipe rims.
- Cap and seal.
- Process in a boiling water bath for 10 minutes.
