A refreshing summer salad with a sweet and tangy Jello base and fresh mint for added flavor.

Serves:

Ingredients

  • 1 (3 oz) package of lime Jello mix
  • 1 cup of boiling water
  • 1/2 cup of cold water
  • 1/4 cup of fresh lime juice
  • 1/4 cup of sugar
  • 1/4 cup of fresh mint leaves, finely chopped
  • 1 (8 oz) can of crushed pineapple, undrained
  • 1/2 cup of mandarin oranges, drained
  • Whipped cream (optional)

Instructions

  1. In a heat-safe bowl, mix together the Jello mix and boiling water until fully dissolved.

  2. Stir in the cold water, fresh lime juice, sugar, and mint leaves. Mix well.

  3. Add the can of crushed pineapple (undrained) and mandarin oranges. Stir until evenly distributed.

  4. Pour the mixture into a salad mold or a 9-inch square baking dish. Cover and refrigerate for at least 4 hours or until set.

  5. Once set, remove from the mold or cut into squares and serve with a dollop of whipped cream, if desired.
