Ingredients

  • 1 cup of vegan butter
  • 1 cup of powdered sugar
  • 1 tsp of vanilla extract
  • 2 cups of vegan marshmallows
  • 2 cups of powdered sugar (for kneading)

Instructions

  1. In a large mixing bowl, cream the vegan butter and 1 cup of powdered sugar together until light and fluffy.

  2. Add the vanilla extract and mix well.

  3. Melt the vegan marshmallows in a microwave-safe bowl for 1-2 minutes, stirring every 30 seconds.

  4. Pour the melted marshmallows into the mixing bowl and mix everything together until well combined.

  5. Sift in the remaining 2 cups of powdered sugar and stir until a dough-like consistency forms.

  6. Transfer the fondant onto a clean surface dusted with powdered sugar, and knead by hand until smooth.

  7. Use immediately or store in an airtight container until ready to use.
