How To Make Lemon & Lavender Fondant Fancies

Ingredients

  • 200g butter, softened
  • 200g caster sugar
  • Zest of 2 lemons
  • 4 eggs
  • 200g self-raising flour
  • 2 tbsp milk
  • 200g icing sugar
  • 1 tbsp dried lavender
  • 1 tbsp lemon juice
  • Yellow food coloring (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease and line a square baking tin.

  2. In a mixing bowl, cream together the butter, sugar, and lemon zest until light and fluffy.

  3. Add the eggs, one at a time, beating well after each addition.

  4. Gradually fold in the flour until well combined, then stir in the milk.

  5. Pour the batter into the prepared tin and smooth the surface.

  6. Bake for 25-30 minutes until golden and a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool completely in the tin, then remove and cut into small squares or rectangles.

  8. In a bowl, mix together the icing sugar, dried lavender, lemon juice, and a few drops of yellow food coloring, if using, until smooth and thick.

  9. Dip each cake square into the icing mixture, ensuring all sides are evenly coated.

  10. Place the coated squares on a wire rack to set completely.

  11. Serve and enjoy!
