How To Make Fat Rascals

Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/2 cup dried currants or raisins
- 1/4 cup chopped candied peel
- 1/2 cup milk
- 1 beaten egg, for brushing
- Demerara sugar, for sprinkling
Instructions

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, and salt.

Add the butter to the flour mixture and rub it in with your fingertips until the mixture resembles breadcrumbs.

Stir in the granulated sugar, currants or raisins, and candied peel.

Gradually add the milk, stirring well, until the dough comes together. You may not need to use all the milk.

Turn the dough out onto a floured surface and gently knead it a few times to bring it together.

Roll out the dough to a thickness of about 1 inch (2.5 cm). Using a round cookie cutter, cut out the fat rascals and place them onto the prepared baking sheet.

Brush the tops of the fat rascals with beaten egg and sprinkle with Demerara sugar.

Bake for 20-25 minutes, or until golden brown on top.

Remove from the oven and transfer to a wire rack to cool slightly before serving.
