- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 ripe banana, mashed
- 1/4 cup unsweetened almond milk
- 1/4 cup creamy peanut butter
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.

In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt together.

In a separate bowl, whisk together the mashed banana, almond milk, peanut butter, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Spoon the batter into the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
