Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1 cup fresh gooseberries
  • 1/4 cup sliced almonds
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking dish.

  2. In a medium bowl, mix together the flour, granulated sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. Press half of the mixture into the bottom of the prepared baking dish. Top with the gooseberries and sprinkle with sliced almonds. Crumble the remaining streusel mixture over the top.

  4. Bake for 35-40 minutes, or until the streusel is golden brown and the gooseberries are soft. Allow to cool completely in the pan.

  5. Once cooled, dust with powdered sugar. Cut into squares and serve.
