- 1 tbsp baking powder

- 2 eggs
- 1 3/4 cups milk
- 1/4 cup unsalted butter, melted
- 1 cup fresh blueberries
- fast blueberry sauce ingredients:
- 1 cup fresh blueberries
- 1/4 cup water
- 2 tbsp sugar
- 1 tsp lemon juice
- 1/2 tsp cornstarch (optional, for thickening)

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, beat the eggs. Add in the milk and melted butter and mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.

Preheat your waffle iron and lightly grease with cooking spray. Pour the batter onto the iron, using the recommended amount for your specific iron.

Close the waffle iron and cook until golden brown and crispy, about 3-5 minutes.

While the waffles are cooking, prepare the fast blueberry sauce. In a small saucepan, combine the blueberries, water, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally.

If desired, whisk the cornstarch with a little water to make a slurry and add it to the saucepan. Stir until the sauce thickens slightly, about 1-2 minutes.
