  • 1 cup Almond flour
  • 1/4 cup Cocoa powder
  • 1/4 cup Erythritol
  • 1 tbsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 tsp Red food coloring
  • 1/4 cup Sugar-free chocolate chips

Instructions

  1. Preheat oven to 325°F.

  2. In a mixing bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.

  3. In another bowl, beat together butter, egg, vanilla extract, and red food coloring.

  4. Add the dry mixture to the wet mixture and combine well.

  5. Mix in chocolate chips.

  6. Scoop spoonfuls of the batter onto a baking tray lined with parchment paper.

  7. Bake for 12-15 minutes.

  8. Allow the cookies to cool before serving.
