Ingredients

  • 2 egg whites
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • Fortunes (written on small pieces of paper)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk the egg whites until frothy.

  3. Gradually add in the flour, sugar, melted butter, and vanilla extract. Mix until smooth.

  4. Spoon about 1 tablespoon of batter onto the prepared baking sheet, spreading it into a thin, even circle.

  5. Bake for 8-10 minutes, or until the edges are golden brown.

  6. Remove the baking sheet from the oven and quickly place a fortune in the center of each cookie.

  7. Fold the cookie in half and, using the edge of a glass or the rim of a mug, gently press the cookie in the middle to create the classic fortune cookie shape.

  8. Allow the cookies to cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.

  9. Repeat the process with the remaining batter.

  10. Serve and enjoy!
