How To Make Coconut-Pecan Cookies

Ingredients
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, combine the shredded coconut and chopped pecans. Set aside.

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract to the butter mixture and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Fold in the coconut and pecan mixture until evenly distributed throughout the dough.

Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges of the cookies are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
