  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 tsp cinnamon
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup flour
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.

  2. In a bowl, combine graham cracker crumbs, melted butter, and cinnamon. Press the mixture into the bottom of the prepared pan to form the crust.

  3. In a separate large bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.

  4. Add eggs one at a time, beating well after each addition. Gradually add flour and sour cream, mixing until just combined.

  5. Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.

  6. Bake for 45 minutes or until the edges are set and the center is slightly jiggly.

  7. Remove from the oven and let it cool completely in the pan on a wire rack.

  8. Once cooled, refrigerate for at least 4 hours or overnight before serving.
