Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup strong brewed coffee
  • ½ cup unsweetened applesauce
  • ½ cup chopped dried figs
  • ½ cup chopped hazelnuts

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.

  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.

  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Alternate adding the dry ingredients and the coffee to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.

  6. Fold in the applesauce, dried figs, and chopped hazelnuts.

  7. Pour the batter into the prepared cake pan and smooth the top.

  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  10. Serve the spiced fig, coffee & hazelnut cake as is or dusted with powdered sugar.
