  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix in pumpkin puree.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir in vanilla extract.

  5. Pour the batter into the prepared baking pan. Smooth the top with a spatula.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool completely before frosting.
