  • 2 cups of all-purpose flour
  • 2 cups of granulated sugar
  • 1 can (20 oz) of crushed pineapple, undrained
  • 1 tsp of baking soda
  • 1 tsp of vanilla extract
  • 1/2 cup of chopped pecans
  • 1/2 cup of flaked coconut
  • 1/2 cup of unsalted butter, melted
  • 3 large eggs, beaten

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  2. In a large mixing bowl, combine the flour, sugar, and baking soda.

  3. Add the eggs, crushed pineapple with its juice, melted butter, vanilla extract, chopped pecans, and flaked coconut to the bowl. Mix well until all ingredients are fully combined.

  4. Pour the batter into the prepared baking dish and smooth the top with a spatula.

  5. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let it cool completely before serving.
