  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 ½ cups mixed berries (such as strawberries, blueberries, and raspberries)
  • ½ cup powdered sugar, for dusting
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.

  6. Gently fold in the mixed berries.

  7. Pour the batter into the prepared cake pan and spread it evenly.

  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.

  10. Once completely cooled, dust the top of the cake with powdered sugar.

  11. Arrange fresh mint leaves around the edge of the cake to create a wreath-like design.
