Easy Dairy-Free Ice Cream Cake Recipe

 

Incredibly easy and simple, this dairy-free ice cream cake combines Oreos, ice cream sandwiches, and whipped cream for luscious cookies and cream sweets.

Ingredients

  • 8 oz Oreos, (½ package) or similar sandwich cookies
  • 12 dairy-free ice cream sandwiches
  • 2 cups dairy-free whipped topping

Instructions

  1. Chop cookies in food processor until finely ground.

  2. Add cookie powder to a large mixing bowl containing the whipped topping.

  3. Fold cookies into whipped topping, this will be the frosting.

  4. Lay 4 ice cream sandwiches on a non-stick baking mat and cover with frosting. Repeat with 2 more layers of sandwiches.

  5. Use remaining frosting to cover the entire cake.

  6. Freeze for at least 2 hours.

  7. Serve and enjoy.
