  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/4 cup milk
  • 1/2 cup fresh blueberries
  • cheesecake topping:
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease 4 individual cake pans or ramekins.

  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. In another bowl, cream together the softened butter, lemon juice, and lemon zest until light and fluffy.

  4. Stir in the milk until well combined.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Gently fold in the blueberries.

  7. Divide the batter equally among the prepared cake pans or ramekins.

  8. In a separate bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.

  9. Dollop the cheesecake mixture over the cake batter in each pan.

  10. Use a toothpick or knife to swirl the cheesecake mixture into the cake batter.

  11. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  12. Allow the cakes to cool for a few minutes before serving.
