Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup fresh blueberries
  • For the cream cheese frosting:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together butter and sugar until light and fluffy.

  4. Beat in the egg and vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined.

  6. Gently fold in the blueberries.

  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  10. For the cream cheese frosting:

  11. In a medium bowl, beat cream cheese and butter until smooth and creamy.

  12. Gradually add powdered sugar and vanilla extract, beating until well combined and fluffy.

  15. Garnish with additional fresh blueberries if desired.

  16. Slice and serve.
