- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/4 cup chopped walnuts
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- cream cheese frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

In a separate bowl, beat the eggs until well combined. Add the grated carrots, vegetable oil, crushed pineapple, coconut, walnuts, and vanilla extract. Mix well.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
