Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/4 cup chopped walnuts
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • cream cheese frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

  3. In a separate bowl, beat the eggs until well combined. Add the grated carrots, vegetable oil, crushed pineapple, coconut, walnuts, and vanilla extract. Mix well.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. In the meantime, prepare the cream cheese frosting. In a mixing bowl, beat the cream cheese and butter until creamy and smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined.

  9. Once the cake has cooled, spread the cream cheese frosting evenly over the top and sides.

  10. Slice and serve. Enjoy!
