  • 4 cups frozen mixed berries
  • 2 ripe bananas
  • 1/4 cup almond milk
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • Fresh berries for topping

Instructions

  1. In a blender or food processor, combine the frozen mixed berries, ripe bananas, almond milk, honey, and vanilla extract.

  2. Blend until smooth and creamy, scraping down the sides as needed.

  3. Pour the mixture into a cake tin or container and smooth the top.

  4. Place in the freezer for at least 4 hours or until firm.

  5. Once firm, remove from the freezer and let sit at room temperature for 10 minutes to soften slightly.

  6. Slice the nice cream cake into servings and top with fresh berries.

  7. Serve immediately and enjoy!
