How To Make Swedish Rice Pudding Recipe

Creamy, comforting and packed with a hint of vanilla, Swedish rice pudding is the perfect dessert for any chilly day.

Serves:

Ingredients

  • 1/2 cup of Arborio rice
  • 2 cups of whole milk
  • 3 tablespoons of sugar
  • 1/2 teaspoon of ground cinnamon
  • 1 vanilla bean or 1 teaspoon of vanilla extract
  • 1/2 cup of heavy cream
  • 1 egg yolk

Instructions

  1. Preheat oven to 325°F.

  2. In a saucepan, combine rice, milk, sugar, and cinnamon.

  3. Split and scrape the vanilla bean inside the pan or add the vanilla extract.

  4. Bring to a simmer over medium heat and cook for 20-25 minutes, until the rice is tender and the mixture is creamy, stirring occasionally.

  5. In a separate bowl, beat the heavy cream and egg yolk together until well combined.

  6. Remove rice from heat and slowly pour in the egg mixture, stirring continuously.

  7. Pour the mixture into a 8 inch baking dish.

  8. Sprinkle extra cinnamon on top.

  9. Bake in the oven for 30-35 minutes until set.

  10. Loosen around the edges of the pudding, and serve.
