How To Make Instant Pot Vegan Rice Pudding

Ingredients
- 1 cup arborio rice
- 4 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup raisins (optional)
- Ground cinnamon (for garnish)
Instructions

Rinse the rice well under cold water and drain.

Add the rice, almond milk, maple syrup, vanilla extract, ground cinnamon, and salt to the Instant Pot.

Close the lid and set the Instant Pot to manual high pressure for 10 minutes.

Once the cooking time is over, let the pressure release naturally for 10 minutes, then carefully release any remaining pressure.

Stir in the raisins, if using, and let the rice pudding cool for a few minutes.
